vegetarian cook

I hit to prepare repast for a vegetarian and digit children that don’t same mushrooms, nonnegative i’m not stabbing on the intent of pasta…. What crapper i prepare - some suggestions?

    make a nice veggie stir fry….mmmm….[contains carrots, onions, peppers, and teriaki sauce]

    Fajitas… buy the sauce, zucchini, Carrots, Cheese, Artichoke, Asparagus, Avocado etc….

    You could aso try my family’s traditional salad recipe:

    Lettuce, Cubed Avocados, Sauce of lemon, soya sauce and sesame and salt, cherry tomatoes and small walnuts.

    What about a pizza, there are lots of things you can use instead of meat.

    Vegetarian Kebab. Courgettes, peppers, onions. Serve with a homemade dip such as lemon and piri piri, or humous.

    My wife is vegetarian and hates mushrooms so i have had lots of practice. Roasted vegetables are always great and can be used to accompany anything from Roast quorn to a pizza ! A fairly mild chili made with vegetarian mince or sweet and sour with quorn fillets is also quick and easy !
    Have a look in your local supermarket for some inspiration they tend to be well stocked towards this sort of thing now.
    How about vegetarian sausage, mash, peas and onion gravy the list is endless. If you need an exact recipe you can google the vegetarian society they have loads of child friendly options.

    you can try Veg manchurian, or veg freid rice.

    Vegetable kebabs on a bed of couscous.
    Cut peppers, onions, courgette, garlic and other veg if you like into small pieces then push on to a skewer, drizzle with oil and bake in the oven.
    Soak the couscous in vegetable stock, drain and add veggie skewers on top.

    Butternut Squash Risotto

    First finely dice 2 onions and cook in a heavy pan in some olive oil until they are translucent
    add a couple of cloves of finely chopped garlic
    add a packet of Risotto rice and a generous knob of butter
    add a splash of fonseca (wine) and stir until rice is also coated and almost translucent
    make up 1.5 pints of stock and add ladle by ladle to the rice until it is absorbed
    keep stirring!
    after about 18-20 mins you should have added all the stock and the rice should have absorbed it
    now add grated parmesan to taste (lots)
    a measure of brandy
    and cubed (boiled) butternut squash
    serve immediately
